Steps
1. Preheat your grill or skillet over medium-high heat.
2. Rub the chicken breast with jerk seasoning, ensuring it's evenly coated.
3. In a small bowl, mix together honey, coconut milk, and the juice of half a lime to create the glaze.
4. Heat coconut oil in the skillet and sear the chicken for about 5-6 minutes on each side or until cooked through (internal temperature of 165°F/75°C).
5. Brush the coconut honey glaze generously over the chicken during the last minute of cooking.
6. Remove the chicken from heat and let it rest for a couple of minutes before slicing.
7. Serve garnished with fresh cilantro and a lime wedge on the side.
