Steps
1. In a small saucepan, bring vegetable broth to a boil.
2. Add rolled oats to the boiling broth and reduce heat to a simmer. Cook for about 5 minutes until oats are tender.
3. In a separate pan, heat olive oil over medium heat. Crack the egg (or add tofu) and cook to your desired doneness.
4. Once oats are cooked, stir in chopped spinach and halved cherry tomatoes. Cook for an additional 1-2 minutes until spinach is wilted.
5. Season with salt and pepper to taste.
6. Serve the oat mixture in a bowl, topped with the cooked egg (or tofu) and sliced avocado.
