Seared Salmon with Roasted Vegetables

This easy yet delicious dish is made with salmon that is seared and served atop roasted vegetables, making it a complete meal in one dish.

Steps

1. Preheat oven to 425 degrees Fahrenheit 2. Place the chopped vegetables on a large baking pan. Drizzle olive oil over them and season with salt and pepper. Toss the vegetables to combine. 3. Place the baking pan in the oven and bake for 15 minutes, stirring occasionally. 4. While the vegetables are baking, heat a large skillet over medium-high heat. Season the salmon with salt and pepper. When the skillet is hot, add the salmon. 5. Cook the salmon for 3-4 minutes per side, or until cooked through. 6. Plate the roasted vegetables and top with the seared salmon filet.
