Steps
1. Heat oil in a pan and sauté onions, garlic, ginger, and green chili until fragrant.
2. Add diced tomatoes and cook until softened.
3. Stir in turmeric, cumin, coriander, red chili powder, and salt.
4. Push the tomato mixture to one side of the pan and crack eggs into the empty space.
5. Scramble the eggs until cooked, then mix with the tomato mixture.
6. Add cooked rice and gently combine everything together.
7. Garnish with fresh coriander leaves before serving.
