Steps
1. Preheat a grill or skillet over medium heat.
2. Season the chicken breast with salt and pepper on both sides.
3. Cook the chicken for about 6-7 minutes on each side, or until fully cooked and juices run clear.
4. In the last minute of cooking, place the slice of cheddar cheese on top of the chicken to melt.
5. In a small bowl, mix the mayonnaise with hot sauce to create the spicy mayo.
6. Toast the burger bun lightly on the grill or skillet.
7. Assemble the burger: place the chicken patty with melted cheese on the bottom half of the bun, top with lettuce and tomato if desired, and add a generous amount of spicy mayo.
8. Close the burger with the top half of the bun and enjoy!
