Cheesy Chicken Hash

This quick and delicious main dish combines the flavors of chicken, carrots, onions, potatoes, and spinach. Topped with melted cheese, it's sure to be a hit.

Steps

1. Heat olive oil in a skillet over medium heat. Add chicken cubes and cook for about 5 minutes, stirring often. 2. Add carrots, onion and potatoes and stir to combine. 3. Cover and cook for about 15 minutes, stirring every few minutes, until carrots, onion, and potato cubes are softened. 4. Add spinach and stir. Sprinkle with salt and pepper. 5. Cover and cook for another 2 minutes. 6. Sprinkle with shredded cheese and cover for about 2 minutes until cheese has melted. Serve hot.
