Steps
1. Preheat your oven to 400°F (200°C).
2. In a small bowl, mix the olive oil, minced garlic, rosemary, thyme, salt, and pepper.
3. Rub the herb mixture onto the lamb chops evenly.
4. Heat a skillet over medium-high heat and sear the lamb chops for 2-3 minutes on each side until browned.
5. Transfer the chops to a baking dish and roast in the oven for 10-12 minutes for medium-rare.
6. While the lamb is roasting, boil the diced potato in salted water until tender, about 15 minutes.
7. Drain the potatoes and return them to the pot.
8. Add butter, milk, minced garlic, and salt to the potatoes, then mash until creamy.
9. Serve the lamb chops alongside the garlic mashed potatoes and enjoy!
