Steps
1. Cook the pasta according to package instructions and set aside.
2. Season the chicken breast with salt and pepper. Heat 1 tablespoon of olive oil in a skillet over medium heat. Cook the chicken for about 6-7 minutes per side or until cooked through. Remove from the skillet and let it rest for a few minutes before slicing into thin strips.
3. In a blender or food processor, combine the avocado, Parmesan cheese, minced garlic, red pepper flakes, remaining olive oil, salt, and pepper. Blend until smooth and creamy.
4. In the same skillet used to cook the chicken, add the avocado sauce and heat it gently over low heat. Stir in the cooked pasta and sliced chicken. Cook for 2-3 minutes, tossing well to coat everything in the sauce.
5. Serve the creamy avocado chicken pasta hot, garnished with additional Parmesan cheese and red pepper flakes if desired.
