Steps
1. Preheat your oven to 400°F (200°C).
2. In a small bowl, combine Dijon mustard, honey, olive oil, garlic, salt, and pepper.
3. Rub the honey mustard mixture all over the chicken thigh, ensuring it's well coated.
4. Place the chicken thigh in a baking dish and bake for 30-35 minutes, or until the internal temperature reaches 165°F (75°C) and the skin is crispy.
5. Remove from the oven and let it rest for 5 minutes before serving.
6. Garnish with fresh thyme if desired.
