Steps
1. Preheat your oven to 375°F (190°C).
2. In a small bowl, combine the diced apple, cheddar cheese, and soy sauce. Mix well and set aside.
3. Cut a pocket in the pork chop by slicing it horizontally, being careful not to cut all the way through.
4. Stuff the pork chop with the apple and cheese mixture, securing the opening with toothpicks if necessary.
5. Season the outside of the pork chop with salt and pepper.
6. Heat the olive oil in an oven-safe skillet over medium heat. Sear the pork chop for about 3–4 minutes on each side until golden brown.
7. Transfer the skillet to the preheated oven and bake for 15–20 minutes, or until the pork is cooked through (145°F or 63°C).
8. Let it rest for 5 minutes before removing toothpicks and serving. Garnish with fresh thyme if desired.
