Steps
1. Preheat your oven to 375°F (190°C).
2. In a small bowl, mix the jelly, soy sauce, salt, and pepper until well combined.
3. Heat olive oil in an oven-safe skillet over medium heat.
4. Season the chicken breast with salt and pepper and sear it in the skillet for about 3-4 minutes on each side until golden brown.
5. Pour the jelly mixture over the chicken, ensuring it's well coated.
6. Transfer the skillet to the preheated oven and bake for 15-20 minutes, or until the chicken is cooked through.
7. Remove from the oven, let it rest for a couple of minutes, then garnish with fresh herbs before serving.
