1. Preheat your grill or oven to 375°F (190°C).
2. In a bowl, mix the peanut butter and cream cheese until smooth. Season with salt and pepper.
3. Carefully slice a pocket into the chicken breast and stuff it with the peanut cheese mixture. Secure with toothpicks if needed.
4. Rub the chicken with piri piri sauce, smoked paprika, salt, and pepper.
5. In a pan, heat olive oil over medium heat. Add the sliced carrots and sauté for about 3 minutes.
6. Drizzle honey over the carrots, stir, and cook for an additional 2-3 minutes until they are tender and glazed.
7. Grill or bake the chicken for 20-25 minutes until cooked through, reaching an internal temperature of 165°F (74°C).
8. Serve the stuffed chicken alongside the honey-glazed carrots, garnished with fresh parsley if desired.
