Steps

1. Preheat your oven to 375°F (190°C). 2. In a small bowl, mix the dark chocolate and cream cheese until well combined. 3. Carefully make a pocket in the chicken breast by slicing it horizontally, being careful not to cut all the way through. 4. Stuff the chocolate mixture into the pocket of the chicken breast and secure it with toothpicks. 5. Season the outside of the chicken breast with salt and pepper. 6. Heat olive oil in an oven-safe skillet over medium heat. 7. Sear the chicken breast for about 3-4 minutes on each side until golden brown. 8. Transfer the skillet to the preheated oven and bake for 15-20 minutes, or until the chicken is cooked through. 9. Remove from the oven, let it rest for a few minutes, then garnish with fresh thyme and serve.
