
Steps
- Preheat your oven to 400°F (200°C).
- In a small bowl, mix olive oil, rosemary, thyme, minced garlic, salt, and pepper to create a marinade.
- Rub the marinade all over the lamb chops and let them rest for 10 minutes.
- While the lamb is marinating, boil the cubed potato in salted water until tender, about 15 minutes.
- Drain the potatoes and return them to the pot. Add butter, milk, garlic powder, and salt. Mash until creamy.
- Heat a skillet over medium-high heat and sear the lamb chops for 2-3 minutes on each side until golden brown.
- Transfer the skillet to the oven and roast for an additional 5-7 minutes for medium-rare.
- Serve the lamb chops with garlic mashed potatoes on the side, garnished with additional herbs if desired.
