Steps

1. Rinse the quinoa under cold water and drain. 2. In a small saucepan, combine quinoa and vegetable broth. Bring to a boil, then reduce heat, cover, and simmer for 15 minutes. 3. While the quinoa cooks, heat olive oil in a skillet over medium heat. Add garlic and sauté for 1 minute. 4. Add bell peppers, carrots, and broccoli to the skillet. Stir-fry for about 5-7 minutes until tender-crisp. 5. Once the quinoa is done, fluff it with a fork and add it to the skillet with the vegetables. 6. Pour in the soy sauce, and stir to combine. Cook for another 2-3 minutes. 7. Chop the mixed nuts coarsely and sprinkle them on top before serving. Season with salt and pepper to taste.
