Tomato Soup Spheres with Carrot Fondue

This is a creative Molecular Gastronomy dish that combines a tomato soup inside small spheres with a creamy carrot fondue.

Steps of Preparation: 1. Start by preparing the tomato spheres. For this, pour the tomato juice into a bowl and freeze it. Once it’s frozen, use an ice scoop or a spoon to take small pieces of the juice and drop them into a bowl filled with cold water. Leave the spheres in the water for a few minutes until they are completely thawed. 2. For the carrot fondue, start by dicing the carrot and boiling it until it’s soft. Then, in a pot, melt the butter and add the flour, paprika, salt, pepper and the softened diced carrots. Mix all the ingredients and pour the milk. Cook until it reaches the desired consistency and creamy texture. 3. Serve the tomato spheres on a plate and top it with the carrot fondue. Enjoy!
